Cajun Tofu Pasta

A delicious and spicy pasta dish featuring golden tofu and a rich tomato sauce, perfect for a hearty meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250-300 g firm tofu
- 2 tablespoons oil
- 1 onion
- 4 garlic cloves
- 200 g mushrooms
- 1 green bell pepper
- 1 tablespoon Cajun seasoning
- 500 g crushed tomatoes
- 2 dl water or vegetable broth
- 1-2 dl oat cream
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions:
1. Cube the tofu and sauté it in oil in a pan until golden brown.
2. Finely chop the onion and garlic, add them to the pan, and sauté until soft.
3. Slice the mushrooms and cube the green pepper, then add them to the pan and cook for a few minutes.
4. Stir in the Cajun seasoning and sauté for another minute.
5. Add the crushed tomatoes and water or vegetable broth, then let it simmer on low heat for about 10-15 minutes.
6. Mix in the oat cream, season with salt and black pepper, and heat through for a moment.
7. Serve hot, garnished with fresh basil.
