Rahkamunkit (Cream Cheese Doughnuts)

Preparation Time: 2 hours
Serving Size: 12 doughnuts

Ingredients:

- 2.5 dl milk
- 50 g fresh yeast
- 1 dl sugar
- 1 tsp salt
- 1 tsp cardamom
- 1 tsp vanilla sugar
- 1 dl quark (or cream cheese)
- 1 egg
- 7-8 dl wheat flour
- 75 g melted butter
- Oil (for frying)
- Powdered sugar (for decoration)

Instructions:

1. Warm the milk until it is lukewarm and dissolve the fresh yeast in it.
2. Add sugar, salt, cardamom, vanilla sugar, quark, and the egg. Mix well.
3. Stir in the melted butter and combine thoroughly.
4. Gradually knead in the wheat flour until the dough is soft and pulls away from the sides of the bowl.
5. Cover the dough with a cloth and let it rise for about 1 hour.
6. Roll out the dough to about 1 cm thick and cut out round doughnut shapes.
7. Allow the doughnuts to rise for another 30 minutes.
8. Heat oil in a pan and fry the doughnuts until golden brown on both sides.
9. Remove the doughnuts and place them on paper towels to drain excess oil.
10. Dust with powdered sugar before serving.
