A refreshing Japanese summer meal that captures the essence of Tokyo! Preparation time is about 30 minutes, serving size is for 4 people.Ingredients:
- 200 g rice
- 500 ml water
- 1 cucumber
- 2 carrots
- 150 g tofu
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 avocado
- 1/2 bunch green onions
- 1 tbsp sesame seeds
- Salt to taste
Instructions:
1. Rinse the rice in cold water until the water runs clear. Cook the rice with the water in a pot until it's tender and the water is absorbed.
2. Peel and slice the cucumber and carrots into thin strips.
3. Cut the tofu into cubes and sauté in sesame oil until golden brown.
4. In a bowl, combine the cooked rice, soy sauce, rice vinegar, and salt.
5. Gently mix in the sautéed tofu, cucumber, carrot, and avocado slices.
6. Finish the dish with chopped green onions and sprinkle sesame seeds on top.
7. Serve immediately and enjoy the summer flavors of Japan!
