A delicious soup that combines warmth and flavor, perfect for enjoying on cold days. Preparation time is about 30 minutes and the recipe serves four.
Ingredients:
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 3 potatoes, diced
- 4 dl vegetable broth
- 2 dl cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 100 g Parmesan cheese, grated
- Fresh herbs for garnish (e.g., parsley)
Instructions:
1. Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until soft.
2. Add the crushed garlic and sauté for another minute.
3. Add the diced potatoes and vegetable broth to the pot. Bring to a boil and let simmer for about 15 minutes, until the potatoes are tender.
4. Blend the soup with an immersion blender or in a regular blender until completely smooth.
5. Stir in the cream, salt, black pepper, and thyme. Heat the soup again, but do not boil.
6. Mix in the grated Parmesan cheese and serve the soup warm, garnished with fresh herbs.
