Ingredients:
- 400 g pasta (e.g., spaghetti) - 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain the pasta, reserving a little cooking water. 2. Meanwhile, cook the bacon or pancetta in a skillet over medium heat until crispy. Add the minced garlic to the skillet and sauté for another minute.
3. In a bowl, crack the eggs and add the grated Parmesan cheese. Mix well until smooth.
4. Once the pasta is cooked, add it to the skillet with the bacon and garlic. Toss to combine.
5. Remove the skillet from heat and quickly add the egg mixture to the pasta, stirring rapidly to ensure the eggs cook lightly and form a creamy sauce. If necessary, add a bit of the reserved cooking water to achieve a smooth consistency.
6. Season with salt and black pepper to taste. Serve immediately, garnished with fresh parsley if desired.
