Ingredients:
- 4 chicken thigh and leg pieces- 1 onion, sliced
- 1 lemon, juiced and zested
- 2 tablespoons zaatar seasoning
- 4 tablespoons olive oil
- 1 cup chicken broth
- Salt and pepper to taste
- 50g pine nuts, toasted
Parsley Hummus:
- 1 can (400g) chickpeas, rinsed
- 1 cup fresh parsley, chopped
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt to taste
- Water as needed
Quinoa:
- 1 cup quinoa
- 2 cups water
- Salt to taste
Instructions:
1. Halve the chicken pieces and place them in a resealable bag. Add the onion, lemon juice and zest, zaatar, 2 tablespoons of olive oil, and chicken broth. Marinate in the refrigerator for 5 hours or overnight.2. Remove the chicken from the marinade, pat dry with paper towels, and place in a baking dish. Mix 2 tablespoons of olive oil with zaatar and brush it over the chicken.
3. Bake the chicken in a preheated oven at 200°C (400°F) for about 35 minutes. Sprinkle toasted pine nuts on top before serving.
4. Prepare the parsley hummus: Blend all ingredients in a food processor until smooth. Add water as needed to achieve the desired consistency.
5. Cook the quinoa: Rinse the quinoa and cook it in salted water for about 15 minutes or until the water is absorbed.
6. Serve the zaatar chicken with parsley hummus and quinoa.
