A delicious brunch perfect for spending time with friends, featuring fresh salads, delightful seafood, and sweet pavlova. Preparation Time: 1.5 hours

Ingredients:
- Blood Orange and Fennel Salad:- 2 blood oranges
- 1 fennel bulb
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
- Quail Egg Poached Eggs:
- 8 quail eggs
- 1 avocado
- 2 dl chili-seasoned croutons
- Salad leaves (e.g., arugula)
- Chives
- Pike Ceviche:
- 200 g pike
- 1 lime (juice)
- 1 red onion
- 1 chili
- Lettuce leaves for serving
- Garlic Roasted Shrimp:
- 200 g shrimp
- 2 cloves garlic
- 2 tbsp butter
- Salt and pepper
- Mango Chipotle Mayonnaise:
- 1 dl mayonnaise
- 1/2 ripe mango
- 1 tsp chipotle paprika powder
- Sides:
- 100 g Bayonne ham
- 100 g Spanish paprika goat cheese
- 100 g thyme olives
- 1 ripe mango
- Pavlova:
- 4 egg whites
- 2 dl sugar
- 1 tbsp cornstarch
- 1 tsp white vinegar
- 2 dl whipped cream
- Fresh berries for garnish
Instructions:
1. Prepare the blood orange and fennel salad by slicing the blood oranges and fennel into thin rounds. Mix olive oil, salt, and pepper, and drizzle over the salad. Garnish with basil.2. Poach the quail eggs in simmering water for about 2-3 minutes and cool. Slice the avocado and arrange on a bed of salad leaves. Top with croutons and chopped chives.
3. For the ceviche, cut the pike into small pieces and squeeze lime juice over it. Add chopped red onion and chili. Let marinate for about 15 minutes.
4. Sauté the shrimp with garlic in butter until cooked through. Season with salt and pepper.
5. Mix mayonnaise, mango, and chipotle paprika powder together. Serve as a dip for the shrimp.
6. Arrange Bayonne ham, goat cheese, thyme olives, and sliced mango on a platter.
7. Prepare the pavlova by whisking egg whites to stiff peaks, gradually adding sugar. Fold in cornstarch and vinegar. Spread the mixture on a baking sheet lined with parchment paper and bake at 120°C for about 1 hour. Allow to cool.
8. Assemble the pavlova with whipped cream and fresh berries on top.
