This delicious herb-seasoned venison roast is perfect for a hearty meal, infused with aromatic spices and served tender and juicy.
Ingredients:
- ½ - 1 tsp salt
- 2 onions
- 1.5 kg boneless venison roast or shoulder
- 2 tsp tarragon
- 1 tbsp mustard
- 1 tsp thyme
- 1 tbsp oil
- ½ tsp black pepper, crushed
- ½ tsp ground juniper berries
Instructions:
1. Peel and finely chop the onions.
2. Sauté the onions in oil in a frying pan until soft and lightly golden.
3. Remove the pan from the heat and add mustard, tarragon, thyme, black pepper, and juniper berries to the sautéed onions. Mix well.
4. Rub the herb mixture onto the surface of the venison roast.
5. Preheat the oven to 180°C (356°F).
6. Place the seasoned venison roast in a baking dish and roast in the oven for about 1.5 hours or until the meat is cooked through.
7. Let the meat rest for a few minutes before slicing and serving.
