A delicious and moist lingonberry cake that is perfect for your coffee table. Preparation time is about 1 hour, serving size is approximately 8-10 people.
Ingredients:
- 125 g melted butter
- 2 eggs
- 1.5 tsp baking powder
- 1 dl chopped nuts or almonds
- 2 dl all-purpose flour
- 4 dl lingonberries
- 1 dl sugar
Instructions:
1. Whisk the eggs and sugar together until frothy.
2. Mix the baking powder with the flour and add it to the egg mixture.
3. Finally, add the melted butter and mix until smooth.
4. Combine the lingonberries, sugar, and chopped nuts in a separate bowl.
5. Spread the lingonberry mixture evenly in a greased baking pan.
6. Pour the batter over the lingonberry mixture and smooth the top.
7. Bake at 175°C (350°F) for about 30-40 minutes, or until the cake is cooked through.
