A delicious and moist cake that combines the freshness of lingonberries with a spiced flavor. Perfect for coffee tables or as a dessert.

Ingredients

- 1.5 dl melted butter
- 4 dl spelt or wheat flour
- 1 dl non-fat milk powder
- (optional) almond or nut crunch
- 1 tsp orange peel
- 3 dl (cane) sugar
- 1.5 - 2 dl lingonberry juice residue or lingonberry jam
- 2 tsp ground cinnamon
- 3 dl water

Instructions

1. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit).
2. In a large bowl, mix the dry ingredients (flour, milk powder, orange peel, sugar, cinnamon).
3. Add the melted butter and water to the mixture. Stir well.
4. Incorporate the lingonberry juice residue or lingonberry jam into the batter and mix until smooth.
5. If desired, add almond or nut crunch to the batter.
6. Pour the batter into a greased cake pan.
7. Bake in the oven for about 45-50 minutes, or until the cake is cooked through and golden brown.
8. Allow the cake to cool before serving.
