Ingredients

- 1 dl black currant juice
- 2 dl black currants
- 1 dl coconut flakes
- 5 dl all-purpose flour
- 4 tsp baking powder
- 6 eggs
- 300 g melted, cooled margarine
- 4 tsp vanilla sugar
- 4 dl sugar
- 2 dl rolled oats

Instructions

1. Whisk the eggs and sugar together until the mixture is light and fluffy.
2. In a separate bowl, mix the all-purpose flour, baking powder, vanilla sugar, coconut flakes, and rolled oats.
3. Add the dry mixture to the egg mixture and stir until well combined.
4. Pour the melted margarine into the batter and mix thoroughly.
5. Add the black currant juice and black currants to the batter, folding gently.
6. Pour the batter into a greased baking dish.
7. Bake in a preheated oven at 180°C (350°F) for about 30-40 minutes or until the top is golden brown and the batter is cooked through.
