Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g cherry tomatoes
- 100 g fresh basil
- 150 g mozzarella cheese
- 3 tablespoons olive oil
- 2 garlic cloves
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve some pasta water.
2. Heat the olive oil in a large pan over medium heat. Add minced garlic and sauté for about one minute until golden brown.
3. Add the cherry tomatoes to the pan and cook until they start to soften, about 5-7 minutes.
4. Mix the cooked pasta into the tomato mixture. If needed, add a bit of reserved pasta water for a creamy texture.
5. Tear the mozzarella cheese into pieces and mix it in. Add chopped basil, salt, and pepper.
6. Serve the dishes topped with grated Parmesan cheese if desired. Enjoy!
