Easy Summer Soup (Helppo Kesäkeitto)

A light and refreshing vegetable soup perfect for warm days. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 4 medium potatoes, diced
- 2 carrots, sliced
- 1 leek, sliced
- 200 g frozen green peas
- 1 liter vegetable broth
- 200 ml cooking cream
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Peel and dice the potatoes and carrots into small cubes.
2. Rinse the leek and slice it into thin rings.
3. Heat the vegetable broth in a pot and add the diced potatoes, carrots, and leek. Let it simmer for about 15 minutes or until the vegetables are tender.
4. Add the frozen peas to the pot and cook for an additional 5 minutes.
5. Pour in the cooking cream and mix well. Season with salt and pepper.
6. Allow the soup to heat through but do not let it boil again.
7. Serve the soup in bowls and garnish with fresh dill.
