Ingredients:
- 300 g pasta (e.g., fusilli or penne)
- 100 ml pesto
- 200 g cherry tomatoes
- 100 g fresh mozzarella cheese
- 2 tbsp olive oil
- Salt (to taste)
- Black pepper (to taste)
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain the pasta, reserving about 100 ml of the cooking water.
2. Halve the cherry tomatoes and cube the mozzarella cheese.
3. Heat the olive oil in a large skillet over medium heat. Add the cherry tomatoes and sauté for about 3-4 minutes until they soften.
4. Add the cooked pasta to the skillet and mix well. Stir in the pesto and add reserved cooking water as needed to prevent the mixture from being too dry.
5. Season with salt and black pepper. Gently fold in the mozzarella cubes.
6. Serve the pasta garnished with fresh basil.
