Ingredients:
- 400 g pasta (e.g., tagliatelle) - 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 150 g ricotta cheese
- 150 ml white wine
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve a bit of the pasta water. 2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until golden.
3. Add the diced bell pepper and cherry tomatoes to the skillet. Cook for about 5 minutes until the vegetables soften.
4. Stir in the fresh spinach and mix until it wilts.
5. Pour the white wine into the skillet and let it simmer for about 5 minutes until the liquid reduces slightly.
6. Combine the cooked pasta and ricotta cheese into the skillet. Add reserved pasta water as needed for a creamy texture. Season with salt and pepper.
7. Serve the dish garnished with fresh basil.
