A delicious vodka pasta that combines a sweet, creamy tomato sauce with a hint of vodka to balance the flavors. Spinach adds an interesting bitterness, complementing the dish.

Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 400 g crushed tomatoes
- 100 ml vodka
- 150 g fresh spinach
- Salt and black pepper to taste
- Fresh basil for garnish (optional)
- Grated Parmesan cheese for serving (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and save a little cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic and cook for another minute.
4. Pour in the crushed tomatoes and let simmer on low heat for about 10 minutes.
5. Add the vodka to the sauce and stir well. Let it simmer for another 5 minutes to allow some alcohol to evaporate.
6. Add the fresh spinach and stir until wilted.
7. Mix the cooked pasta into the sauce. If needed, add a bit of the reserved cooking water to prevent the pasta from being too dry.
8. Season with salt and black pepper to taste.
9. Serve the dish warm, garnished with fresh basil and grated Parmesan cheese if desired.
