Delicious mint chocolate cupcakes perfect for celebrating St. Patrick's Day. A delightful combination of mint and chocolate.Preparation Time: 30 minutes
Serving Size: 12 cupcakes
Ingredients:
- 1.5 dl sugar - 1 dl butter
- 2 eggs
- 1.5 dl milk
- 2 dl all-purpose flour
- 1 dl cocoa powder
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 0.5 dl mint liqueur (or mint extract)
- 100 g dark chocolate (chopped)
Instructions:
1. Preheat the oven to 180°C (160°C for fan ovens).2. Grease the muffin tin or use paper liners.
3. Beat the sugar and butter until fluffy. Add the eggs one at a time, mixing well after each addition.
4. Stir in the milk and mint liqueur until smooth.
5. In a separate bowl, combine the flour, cocoa powder, baking powder, and vanilla sugar.
6. Gradually add the dry ingredients to the wet mixture, mixing until the batter is smooth.
7. Fold in the chopped dark chocolate gently.
8. Divide the batter among the muffin cups and bake in the oven for about 18-20 minutes, or until a toothpick inserted comes out clean.
9. Allow to cool before serving.
