Ingredients:

- 1 kg pumpkin (cubed)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 tbsp olive oil
- 1 liter vegetable broth
- 100 ml cream (or coconut cream)
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, sauté for about 5 minutes until softened.
3. Add pumpkin cubes to the pot and mix well.
4. Pour vegetable broth over the pumpkin and bring the mixture to a boil. Let it simmer for about 15-20 minutes until the pumpkin is soft.
5. Blend the soup with an immersion blender or in a blender until completely smooth.
6. Stir in the cream and season with salt and pepper. Heat the soup again, but do not boil.
7. Serve the hot soup garnished with fresh parsley.
