Ingredients:
- 400 g chicken fillets - 2 tbsp oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bell pepper (preferably red)
- 1 onion
- 200 g rice
- 4 dl chicken broth
- 1 tsp paprika powder
- 1/2 tsp cayenne pepper
- Fresh parsley for garnish
Instructions:
1. Cut the chicken fillets into bite-sized pieces and season with salt and black pepper. 2. Heat the oil in a pan and fry the chicken pieces until golden brown.
3. Add the chopped bell pepper and onion to the pan, and continue frying until the vegetables are soft.
4. Stir in the rice and mix well.
5. Pour the chicken broth into the pan, add paprika powder and cayenne pepper. Stir and bring to a boil.
6. Reduce the heat and cover the pan. Let it cook for about 20 minutes, until the rice is cooked and the liquid is absorbed.
7. Garnish with fresh parsley and serve.
