Ingredients:
- 400 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, diced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 100 g feta cheese, crumbled
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some pasta water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for about 3 minutes.
3. Add red bell pepper and zucchini to the skillet, cook for an additional 5 minutes until vegetables are tender.
4. Stir in cherry tomatoes, oregano, salt, and black pepper. Cook for another 2-3 minutes until tomatoes soften slightly.
5. Combine the cooked pasta with the vegetable mixture. Add a little reserved pasta water if needed to make the mixture more saucy.
6. Mix in the crumbled feta cheese and garnish with fresh basil before serving.
