Ingredients:
- 1 cup vegan whipping cream (e.g., Alpro soy whip)
- 150 g vegan cream cheese (e.g., Oatly Påmackan)
- 1 ½ cups vegan quark (Alpro Greek Style)
- Zest of 1 lemon
- ½ cup sugar
- ½ cup almond flakes or chopped almonds
- 3 tablespoons raisins
- 5 dried apricots
- For garnish: roasted almond flakes, lemon balm leaves, and berries
Instructions:
1. Whip the vegan whipping cream until fluffy.
2. Add the vegan cream cheese, quark, and sugar to the whipped cream and mix well.
3. Wash the lemon thoroughly and finely zest it. Add the zest to the mixture.
4. Stir in the almond flakes and raisins.
5. Cut the dried apricots into small pieces and fold them into the mixture.
6. Pour the mixture into a mold and cover with a clean kitchen towel. Let it chill in the refrigerator for at least overnight.
7. Serve garnished with roasted almond flakes, lemon balm leaves, and berries.
