Aloo Gobi is a delicious Indian vegetarian dish that combines potatoes and cauliflower in a spiced sauce. The addition of chickpeas provides protein and heartiness to the meal. This dish is vegan and gluten-free. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 3 medium potatoes - 1 small cauliflower
- 1 can of chickpeas
- 1 onion
- 3 garlic cloves
- 1 fresh chili (optional)
- 1 tsp curry powder
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh coriander for garnish
Instructions:
1. Peel and dice the potatoes into small cubes. Wash and chop the cauliflower into small florets. 2. Finely chop the onion and garlic. If using chili, chop it as well.
3. Heat oil in a large skillet over medium heat. Add the onion and garlic, sautéing until soft.
4. Add curry powder, turmeric, cumin, and chili to the skillet. Stir and cook the spices for about a minute.
5. Add the diced potatoes and mix well. Sauté for a few minutes.
6. Add the cauliflower and drained chickpeas. Stir and add salt as needed.
7. Pour a little water into the mixture to help the vegetables cook. Cover with a lid and simmer for about 15-20 minutes until the potatoes are tender.
8. Finally, add garam masala and stir. Garnish with fresh coriander before serving.
