Serving Size: 4 servings
Ingredients:
- 500 g potatoes - 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1-2 green chilies, chopped
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon special aroma spice
- Salt to taste
- Fresh coriander for garnish
Instructions:
1. Peel and dice the potatoes. 2. Heat oil in a pan over medium heat and add cumin seeds. Fry until the seeds start to pop.
3. Add the chopped onion and sauté until soft and golden brown.
4. Add the crushed garlic and green chili, and cook for another minute.
5. Add the potato cubes to the pan and mix well.
6. Stir in turmeric, coriander powder, cayenne pepper, special aroma spice, and salt. Mix all ingredients together.
7. Add about 100 ml of water, cover the pan with a lid, and let it cook for about 15-20 minutes until the potatoes are tender.
8. Remove the lid and let the curry cook for a few more minutes if there is excess liquid.
9. Garnish with fresh coriander before serving.
