Ingredients:
- 400 g chicken fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g broccoli, chopped
- 200 g cherry tomatoes, halved
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika powder
- 1/2 cup fresh parsley, chopped
- 200 g whole grain rice
Instructions:
1. Cook the whole grain rice according to the package instructions.
2. Heat olive oil in a large skillet over medium heat.
3. Add the chopped onion and crushed garlic; sauté until soft.
4. Add the chicken fillets and cook until golden brown and cooked through.
5. Stir in the diced bell pepper, chopped broccoli, and halved cherry tomatoes. Cook for an additional 5-7 minutes until the vegetables are tender but crisp.
6. Season with salt, black pepper, and paprika powder. Mix well.
7. Serve the warm chicken and vegetable mixture over the cooked rice, garnished with chopped parsley.
