Veal Ribs in Balsamic Marinade

A delicious veal rib dish marinated in balsamic vinegar and slow-cooked to tender perfection. Ideal for a Sunday dinner! Preparation Time: 3–4 hours (including marinating time)
Serving Size: 4–6
Ingredients:
- 800 g veal ribs- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 garlic cloves, minced
- 1 tsp crushed black pepper
- Generous amount of dried (or fresh) thyme
- 2 tbsp brown sugar
- Salt to taste
- A splash of balsamic vinegar (for finishing)
- A drizzle of honey (for finishing)
- Hot water (for the roasting pan)
Instructions:
1. Trim the ribs and place them in a resealable plastic bag.2. In a bowl, mix together the marinade ingredients: olive oil, balsamic vinegar, garlic, black pepper, thyme, and brown sugar. Pour the marinade over the meat and toss to coat evenly.
3. Remove excess air from the bag and refrigerate overnight or for at least a few hours to marinate.
4. Bring the meat to room temperature before cooking.
5. Place the ribs in a roasting pan, season generously with salt, and pour any leftover marinade over them. Add a splash of hot water to the bottom of the pan.
6. Cook in a 125°C (257°F) oven covered with a lid or foil for 2–3 hours until the meat pulls away from the bones.
7. Allow the ribs to rest briefly. For finishing, mix balsamic vinegar, honey, and the pan juices.
8. Slice the ribs into portions, brush with the glaze, and finish under a broiler until the surface is caramelized.
9. Serve hot!
