Ingredients

- 1 tsp grated lemon zest
- 1 vanilla bean
- 500 g fresh strawberries
- 3 gelatin sheets
- 150 g sugar
- 500 ml heavy cream
- Mint leaves (for garnish)

Instructions

1. Split the vanilla bean in half lengthwise and place the halves, cream, and 100 g of sugar into a saucepan.
2. Heat over low heat and bring to a gentle simmer, stirring continuously for 2-3 minutes.
3. Remove the saucepan from heat and stir in the grated lemon zest.
4. Soak the gelatin sheets in cold water for about 5 minutes, then squeeze out the excess water and mix the gelatin into the panna cotta mixture once it has slightly cooled.
5. Pour the mixture into serving cups and refrigerate for at least 4 hours to set.
6. To prepare the strawberry sauce, blend the fresh strawberries and mix with the remaining sugar.
7. Serve the panna cotta with the strawberry sauce and garnish with mint leaves.
