A delicious Finnish dessert combining creamy vanilla porridge and tangy cranberry sauce.

Ingredients

- For the Vanilla Porridge:
- 2 dl water
- 2 dl rice (pudding rice)
- 8 dl milk
- 2 ½ dl whipped vanilla cream
- 1 tsp vanilla sugar
- 1 tbsp sugar
- For the Cranberry Sauce:
- 1 liter water
- 1 dl cranberries
- 1 dl sugar
- 2 ½ tbsp potato starch
- 3 dl cranberries (for garnish)

Instructions

1. In a pot, bring the water to a boil and add the rice. Cook until the rice is tender.
2. Stir in the milk and simmer the porridge for about 50 minutes, stirring occasionally.
3. Once cooked, fold in the whipped vanilla cream, vanilla sugar, and sugar until well combined.
4. For the cranberry sauce, bring the water to a boil in a separate pot.
5. Add the cranberries and sugar, and cook for about 10 minutes.
6. Mix the potato starch with a small amount of cold water and add to the sauce, cooking for a few more minutes until thickened.
7. Stir in the remaining cranberries into the sauce and mix well.
8. Serve the vanilla porridge in bowls, topped with the cranberry sauce.
