Ingredients:
- 150 g goat cheese
- 100 g fresh raspberries
- 1 avocado
- 150 g mixed salad greens (e.g., arugula, baby spinach)
- 1/2 red onion
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh mint for garnish
Instructions:
1. Rinse the mixed salad greens and place them in a large bowl.
2. Cut the avocado in half, remove the pit, and peel it. Slice the avocado and add it to the salad.
3. Finely chop the red onion and add it to the salad.
4. Add the fresh raspberries to the salad.
5. Crumble the goat cheese over the salad mixture.
6. Prepare the dressing by mixing the olive oil and balsamic vinegar. Season with salt and pepper.
7. Drizzle the dressing over the salad and gently toss to combine.
8. Garnish with fresh mint before serving.
