A delicious and easy raspberry curd tart that is perfect for serving at coffee gatherings or as a dessert. Preparation time is about 45 minutes, and this recipe serves approximately 8 people.
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 500 g quark (or ricotta)
- 200 ml sugar
- 2 eggs
- 1 tsp vanilla sugar
- 200 g raspberries (fresh or frozen)
- 1 tbsp potato starch
Instructions:
1. Crush the digestive biscuits and mix them with the melted butter. Press the mixture into the bottom and sides of a tart pan.
2. In a bowl, combine the quark, sugar, eggs, and vanilla sugar, mixing well.
3. Gently fold in the raspberries and potato starch into the mixture.
4. Pour the filling over the biscuit base and smooth the top.
5. Bake at 175°C (347°F) for about 30-35 minutes, until the filling is set.
6. Allow to cool before serving.
