Ingredients:
- 2.5 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 0.5 tsp nutmeg
- 0.5 tsp ginger
- 0.5 tsp salt
- 1 cup milk
- 0.5 cup vegetable oil
- 1 egg
- 1 cup chopped nuts or raisins (optional)
Instructions:
1. Preheat the oven to 350°F (180°C) and prepare a muffin tin with paper liners.
2. In a large bowl, mix together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
3. In another bowl, whisk together milk, oil, and egg.
4. Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.
5. If desired, fold in the nuts or raisins gently.
6. Divide the batter evenly among the muffin cups and bake in the oven for about 20-25 minutes, or until the muffins are golden brown and a toothpick inserted comes out clean.
7. Allow the muffins to cool for a few minutes before serving.
