A speedy and easy pasta dish for busy days! Preparation time: 20 minutes. Serves: 2.
Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 100 g cherry tomatoes, halved
- 100 g spinach
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about a minute.
3. Add bell pepper and cherry tomatoes to the skillet. Cook for about 5-7 minutes until the vegetables soften.
4. Add the cooked pasta and spinach to the skillet. Mix well and add reserved cooking water as needed for a saucier consistency.
5. Season with salt and pepper. Finally, stir in the grated Parmesan cheese.
6. Serve the dishes garnished with fresh basil. Enjoy your delicious and quick meal!
