A spicy and delicious dish featuring tofu and green beans, offering rich flavors and heartiness. An excellent choice for dinner or entertaining guests.

Serving Size: 4 servings

Ingredients:

- 2 tablespoons oil
- 6-8 garlic cloves, minced
- 1 red onion, chopped
- 1 teaspoon mustard seeds
- ½ teaspoon ground coriander
- 1 bay leaf
- 3 cm piece of fresh ginger, grated
- ½ teaspoon ground turmeric
- ¼ teaspoon cayenne pepper
- 1 teaspoon garam masala
- 400 g crushed tomatoes
- ¾ cup (20) cashews
- 1 cup coconut milk
- 1 teaspoon salt
- 1 package of firm tofu
- 1 tablespoon oil (for frying the tofu)
- 100 g green beans (frozen)

Instructions:

1. Sauté the chopped onion in oil until it starts to turn lightly golden.
2. Add all the spices and continue sautéing for a moment.
3. Stir in the crushed tomatoes, coconut milk, cashews, and salt. Simmer for 10 minutes.
4. Blend the sauce until smooth using an immersion blender.
5. Cube the tofu and fry it in a separate pan with oil until it is browned.
6. Add the tofu and green beans to the sauce. Allow the beans to thaw. Check the cooking instructions for the beans and simmer them in the sauce if necessary, being careful not to overcook.
7. Serve the sauce with cooked pearl barley or your choice of side.
