Ingredients:
- 400 g chicken fillet
- 2 tablespoons olive oil
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 zucchini
- 400 g crushed tomatoes
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cut the chicken fillet into bite-sized pieces and season with salt and pepper.
2. Heat olive oil in a pan over medium heat and add the chicken pieces. Cook until golden brown.
3. Add chopped onion and garlic to the pan. Sauté until soft.
4. Add chopped bell pepper and zucchini, and cook for a few more minutes.
5. Pour in the crushed tomatoes and balsamic vinegar. Mix well and let simmer for about 10 minutes.
6. Serve the dish garnished with fresh basil.
