A rich and indulgent chocolate cake infused with cognac and mint, perfect for special occasions. Preparation Time: 1 hour
Serving Size: 8 servings
Ingredients:
- 2 dl brown sugar
- 175 g softened butter
- 2 eggs
- 1.5 tsp baking powder
- 100 g chopped dark chocolate
- 2 shots of good cognac
- 2.5 dl all-purpose flour
- 2 dl whipped vanilla cream or whipped heavy cream
- 2 tsp vanilla sugar
- 0.5 dl cocoa powder
- 2 shots of mint liqueur
Instructions:
1. In a bowl, beat the softened butter and brown sugar together until fluffy.
2. Add the eggs one at a time, mixing well after each addition.
3. In a separate bowl, combine the baking powder, all-purpose flour, and cocoa powder, then gradually add it to the batter.
4. Fold in the chopped dark chocolate, cognac, and mint liqueur into the batter and mix well.
5. Pour the batter into a greased and floured cake pan.
6. Bake at 175°C (350°F) for about 35-40 minutes or until a toothpick inserted comes out clean.
7. Let the cake cool before serving.
8. Serve the cake topped with whipped vanilla cream or whipped heavy cream.
