Ingredients:

- 50 g dark chocolate (at least 70%), melted and slightly cooled
- 250 g butter, at room temperature
- 250 g organic cane sugar (or light muscovado sugar)
- 1/2 tsp salt
- 100 g cocoa powder
- 250 g all-purpose flour
- 1.5 tsp baking powder
- 1 tsp baking soda
- 3 large organic eggs
- 150 g crème fraîche (1 container)
- 225 ml milk
- 50 g crushed chocolate
For the Butter-Cocoa Frosting:
- 140 g butter, at room temperature
- 50 g cocoa powder
- 200 g powdered sugar
- A pinch of salt
- (2 tbsp milk, if needed)
For the Filling:
- Cherry jam (optional)

Instructions:

1. Grease and flour two cake pans, approximately 20 cm in diameter.
2. Melt the chocolate in a water bath and set aside to cool.
3. Preheat the oven to 180 °C (350 °F).
4. Sift the flour, cocoa, baking powder, and baking soda into a bowl.
5. In another bowl, beat the butter, sugar, and salt until light and fluffy. Add the eggs one at a time, mixing well after each addition.
6. Add half of the flour mixture to the batter and mix. Then add the melted chocolate and the remaining flour. Finally, mix in the crème fraîche and enough milk to achieve a soft batter.
7. Divide the batter between the two pans and bake on the lower rack of the oven for about 30 minutes, until the center is just set.
8. Allow the cakes to cool completely.
9. For the buttercream, beat the butter until fluffy. Add the cocoa powder and powdered sugar. If the mixture is too thick, add milk as needed.
10. Spread about one-third of the buttercream between the cakes and reserve the rest for the top. If using jam, let the cake sit in the refrigerator overnight.
11. Decorate the cake as desired, for example with crushed chocolate cookies or berries. Serve with whipped cream.
