Delicious traditional Russian pancakes, perfect for pairing with champagne. An ideal choice for celebrations or special occasions!

Serving Size: 4-6 people

Ingredients:

- 2 dl all-purpose flour
- 1 dl buckwheat flour
- 1 tsp salt
- 1 tsp sugar
- 2 dl milk
- 1 dl water
- 1/2 packet (25 g) fresh yeast or 1 packet dry yeast
- 2 eggs
- 50 g melted butter
- Oil for frying

Toppings:

- Seaweed caviar
- Sour cream
- Chopped leeks
- Cocktail cucumbers
- Honey

Instructions:

1. In a bowl, mix the all-purpose flour, buckwheat flour, salt, and sugar.
2. Dissolve the yeast in warm milk and water, then add the mixture to the flour mixture.
3. Add the eggs and melted butter. Stir until you have a smooth batter.
4. Cover the batter with a cloth and let it rise for about 30 minutes.
5. Heat a frying pan and add oil. Pour the batter into the pan and cook until golden brown on both sides.
6. Serve the blinis warm with your choice of toppings. Enjoy with champagne!
