Ingredients:
- 400 g pasta (such as spaghetti or fusilli)- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, diced
- 200 g cherry tomatoes, halved
- 100 g fresh basil, chopped
- 100 g feta cheese, crumbled
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to the package instructions. Drain and set aside.2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until soft.
3. Add the crushed garlic and diced bell pepper. Cook for another 3-4 minutes.
4. Add the zucchini and cherry tomatoes. Cook until the vegetables are tender.
5. Add the cooked pasta to the skillet and mix well. Season with salt and pepper.
6. Remove the skillet from heat and add the chopped basil and crumbled feta cheese. Stir gently.
7. Serve immediately and enjoy!
