Delicious and soft doughnuts filled with apple jam, perfect for autumn! Preparation time is about 2 hours, and it serves approximately 20 doughnuts.Ingredients:
- Doughnut Dough:- 2.5 dl milk
- 1.5 packets (about 17 g) dry yeast
- 80 g melted butter
- 80 g sugar
- 1 tsp salt
- 1.5 tsp finely ground cardamom
- 1 large egg
- 7-8 dl all-purpose flour
- For Frying:
- 1 liter canola oil or coconut fat
- Apple-Cinnamon Jam:
- 5 apples (peeled, about 400-500 g)
- 1 tsp lemon juice
- 50 g brown sugar
- 50 g butter in small pieces
- 1 tsp cinnamon
- 0.5 tsp ginger
- For Coating:
- 2 dl sugar
- 1 tsp cinnamon
Instructions:
1. Heat the milk to 42°C and add the dry yeast.2. Melt the butter and let it cool. Mix sugar, salt, and cardamom together.
3. Pour the yeast milk into a mixing bowl and add the other ingredients except for the flour. Mix well.
4. Gradually add the flour in 2-3 batches and knead the dough with a dough hook for about 10 minutes until it pulls away from the bowl's sides. Cover and let rise in a warm place for about 2 hours.
5. Prepare the apple jam: Peel the apples, remove the cores, cut into small pieces, and mix with lemon juice. Spread in a baking dish, add the remaining ingredients, and bake at 150°C for 30-45 minutes. Blend and let cool.
6. Dust a work surface with flour and turn the risen dough onto it. Knead slightly and divide into 20 equal pieces. Shape into balls and let rise on a baking sheet.
7. Heat the oil to 180°C and fry the doughnuts until golden brown, about 1.5-2 minutes on each side.
8. Fill the doughnuts with apple jam and roll in the cinnamon-sugar mixture. Serve fresh.
