This sous vide recipe creates incredibly tender and flavorful beef cheeks that are perfect for a special dinner.

Ingredients:

- 2 domestic beef cheeks
- 1 tsp fine sea salt
- 2 small bay leaves
- 2 small sprigs of fresh rosemary
- 2 small garlic cloves
- 2 tbsp olive oil

Instructions:

1. Preheat the sous vide machine and water to 82˚C (180˚F).
2. Pat the beef cheeks dry and season both sides with salt.
3. Place each cheek in its own vacuum-seal bag.
4. Peel and slice the garlic cloves, placing one in each bag.
5. Add one bay leaf and one sprig of rosemary to each bag.
6. Drizzle 1 tablespoon of olive oil into each bag, keeping them upright.
7. Remove the air from the bags and seal them with a vacuum sealer.
8. Place the bags in the water bath and braise for eight hours.
9. After cooking, open the bags and pour the collected juices into a small saucepan. Reduce the sauce by half over medium heat.
10. Strain the finished sauce and set aside for serving.
11. Pat the cheeks dry and sear the surface with a culinary torch until beautifully browned.
12. Serve the beef cheeks with mashed potatoes and gremolata.
