A delicious recipe for roasted vegetables that are perfect for a buffet table or as a side dish. Preparation Time: 40 minutes
Serving Size: 4-6 people
Ingredients:
- 2 carrots - 1 zucchini
- 1 bell pepper
- 1 red onion
- 200 g broccoli
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions:
1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).2. Peel and slice the carrots, zucchini, and red onion. Cut the bell pepper and broccoli into small pieces.
3. Place all the vegetables in a large bowl and add olive oil, salt, black pepper, thyme, and rosemary. Mix well to coat all the vegetables with the seasoning.
4. Spread the vegetables evenly on a baking sheet lined with parchment paper.
5. Roast in the oven for about 25-30 minutes, until the vegetables are tender and have a beautiful golden-brown color. Stir once during roasting.
6. Serve warm and enjoy!
