This delicious chocolate cake is perfect for celebrations and can be easily prepared in advance. Bake the cake layers ahead of time and fill and frost just before serving. Preparation Time: 2 hours + cooling time
Serving Size: 12 servings
Ingredients:
- 200 g dark chocolate - 150 g butter
- 3 dl sugar
- 4 eggs
- 2.5 dl all-purpose flour
- 1 dl cocoa powder
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 1 dl milk
Filling:
- 250 g mascarpone cheese - 2 dl heavy cream
- 2 tbsp sugar
- 1 tsp vanilla sugar
Frosting:
- 100 g dark chocolate - 50 g butter
Instructions:
1. Melt the butter and dark chocolate in a saucepan over low heat. Stir in the sugar and let it cool. 2. In a separate bowl, whisk the eggs. Add the egg mixture to the chocolate-butter mixture and mix well.
3. In another bowl, combine the dry ingredients (flour, cocoa powder, baking powder, and vanilla sugar). Gradually add this mixture to the chocolate mixture, alternating with the milk. Mix until smooth.
4. Pour the batter into greased cake pans (about 20 cm in diameter). Bake at 175°C (347°F) for about 25-30 minutes. Allow to cool completely.
5. To prepare the filling, whip the heavy cream until stiff peaks form. In a separate bowl, combine mascarpone, sugar, and vanilla sugar. Gently fold the whipped cream into the mascarpone mixture.
6. Cut the cooled cakes in half and fill them with the mascarpone cream mixture. Place one cake layer on top of the other.
7. For the frosting, melt the chocolate and butter together in the microwave or in a double boiler. Stir until smooth and pour over the cake.
8. Allow the cake to set in the refrigerator for at least a couple of hours or overnight before serving.
