Sikke Sumarin Chocolate Muffins with Vana Tallinn Liqueur

Delicious chocolate muffins infused with the unique depth of Vana Tallinn liqueur. Preparation Time: 30 minutes
Serving Size: 12 muffins
Ingredients:
- 100 g dark chocolate - 100 g butter
- 2 dl sugar
- 2 eggs
- 1 dl Vana Tallinn liqueur
- 2 dl all-purpose flour
- 1 dl cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 100 g chocolate chips (optional)
Instructions:
1. Preheat the oven to 175°C (160°C for fan oven). 2. Melt the butter and dark chocolate together in a saucepan over low heat, stirring until smooth, then let it cool slightly.
3. In a bowl, whisk the sugar and eggs together until light and fluffy.
4. Add the melted chocolate-butter mixture to the egg-sugar mixture and mix well.
5. Stir in the Vana Tallinn liqueur until fully combined.
6. In a separate bowl, combine the dry ingredients (flour, cocoa powder, baking powder, and salt) and gently fold them into the batter.
7. If using chocolate chips, fold them into the batter now.
8. Divide the batter among muffin cups and bake in the oven for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the muffins to cool before serving.
