Savariini is a delicious yeast-raised cake, soaked in an alcoholic syrup and served with juicy berries and whipped cream. This dessert is perfect for celebrating St. Urho's Day.
Preparation Time: 1 hour (plus rising time and cooling time)
Serving Size: 5 small savariinis or 1 small ring mold

Ingredients:

- 0.5 dl milk
- 2 g dry yeast
- 1 tbsp all-purpose flour
- 1 tsp sugar
- 1.5 dl all-purpose flour
- 0.5 tsp salt
- 1.5 tbsp sugar
- 1 egg
- 50 g melted butter
- 3 dl water
- 0.5 dl sugar
- 5 cl dark rum or almond liqueur

To Finish:

- Juicy berries or fruits
- Whipped cream

Instructions:

1. Heat the milk to 42-45 degrees Celsius.
2. In a bowl, mix 1 tbsp of flour, dry yeast, and 1 tsp of sugar. Add this mixture to the warm milk. Let the yeast activate for about 5 minutes.
3. Add the remaining flour, sugar, and salt to the dough. Mix well and add the egg. Once the dough is smooth, incorporate the cooled melted butter.
4. Grease a small ring mold or donut pan and pour the dough into it. Allow the dough to rise under a cloth for about 30 minutes.
5. Bake the savariinis at 190 degrees Celsius for 15-20 minutes. Let them cool in the mold.
6. Boil the water and sugar together, then add the rum or almond liqueur to the syrup. Soak the savariini(s) in the syrup and let them sit in the fridge for a few hours.
7. Carefully remove the savariini(s) from the mold and serve chilled with juicy berries and whipped cream.
