A refreshing and light lunch that brings the essence of spring to your plate. This salad is a perfect blend of flavor and color, and it's easy to make. Preparation Time: 20 minutes
Serving Size: 2-3 servings
Ingredients:
- 200 g fresh green asparagus - 100 g baby spinach
- 1 avocado
- 100 g cherry tomatoes
- 50 g feta cheese
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Wash and peel the asparagus stalks if necessary. Cut the asparagus into pieces about 4-5 cm long.2. Boil the asparagus in salted water for about 3-4 minutes until just tender. Drain and cool.
3. Rinse the baby spinach and place it in a large salad bowl.
4. Cut the avocado into cubes and add it to the bowl.
5. Halve the cherry tomatoes and add them to the salad.
6. Add the cooled asparagus and crumbled feta cheese.
7. In a small bowl, mix together olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the salad and gently toss to combine.
8. Serve immediately and enjoy the spring flavors!
