Ingredients:
- 2 tbsp olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 parsnip, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and black pepper to taste
- 200g frozen peas
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic. Sauté until the onion is soft.2. Add the diced carrots, potatoes, parsnip, and bell pepper. Cook for about 5 minutes, stirring occasionally.
3. Pour the vegetable broth into the pot and add thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat. Let the soup simmer gently for about 25 minutes, until the vegetables are tender.
4. Stir in the frozen peas and let simmer for another 5 minutes.
5. Serve hot and garnish with fresh parsley.
