Ingredients:

- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 parsnip, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and black pepper to taste
- 200g frozen peas
- Fresh parsley for garnish

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic. Sauté until the onion is soft.
2. Add the diced carrots, potatoes, parsnip, and bell pepper. Cook for about 5 minutes, stirring occasionally.
3. Pour the vegetable broth into the pot and add thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat. Let the soup simmer gently for about 25 minutes, until the vegetables are tender.
4. Stir in the frozen peas and let simmer for another 5 minutes.
5. Serve hot and garnish with fresh parsley.
