Delicious and gluten-free nutty banana cookies made easily without added sugar. Perfect for snacks or coffee breaks. Preparation Time: 30 minutes
Serving Size: About 12 cookies
Ingredients:
- 1 cup almonds
- 1 cup cashew nuts
- 1 cup pecan nuts
- 2 bananas
- 1 teaspoon vanilla extract
- 0.5 teaspoon cinnamon
- 0.25 teaspoon cardamom
- 0.25 teaspoon sea salt
- 1 cup raisins
Instructions:
1. Place the almonds and nuts in a food processor and blend until finely chopped.
2. Add the bananas and blend until smooth.
3. Add the vanilla, cinnamon, cardamom, salt, and raisins, and mix well.
4. Scoop spoonfuls of the dough onto a baking sheet lined with parchment paper and flatten them to about half an inch thick.
5. Bake the cookies in a preheated oven at 175°C (350°F) for about 20 minutes.
6. Remove the cookies and let them cool on a wire rack.
