A delicious and hearty dish that combines flavors and textures, perfect for gatherings or relaxing at home. Preparation time: 1 hour. Serving size: 4 servings.Ingredients:
- 4-5 large starchy potatoes (or sweet potatoes)- 1-2 tbsp mustard
- ½ bucket of Turkish yogurt
- 1½ dl light mayonnaise
- Sliced sun-dried tomatoes
- Olives
- Salt and pepper to taste
- Cheese (e.g., grated cheese)
- Fresh parsley
- Oregano
- Basil
- Chopped bell pepper
- Chopped (red) onion
- Small leek
Instructions:
1. Wash the potatoes thoroughly and boil them until tender. Allow to cool slightly.2. Cut the cooked potatoes in half lengthwise and carefully scoop out the insides, leaving a bit of the edges intact.
3. In a bowl, mix the yogurt, mayonnaise, mustard, chopped bell pepper, onion, leek, sun-dried tomatoes, and olives. Season with salt, pepper, oregano, and basil.
4. Add the scooped potato insides to the mixture and stir well.
5. Fill the potato halves with the filling and sprinkle grated cheese on top.
6. Bake in a preheated oven at 200°C (392°F) for about 20-25 minutes, until the cheese is melted and golden.
7. Garnish with fresh parsley before serving.
