A delightful combination of chorizo and shrimp creates a rich and flavorful dish perfect for summer evenings. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- Spaghetti - 1 chorizo sausage
- 200 g shrimp
- 1 can crushed tomatoes
- 200 g cherry tomatoes
- 1 chili pepper
- 2 garlic cloves
- 1 lime
- A handful of fresh cilantro
- Parmesan cheese
- Olive oil
- Salt
- Pepper
Instructions:
1. Chop the chorizo and add it to a pan with olive oil. Cook until it starts to brown. 2. Add minced garlic and chopped chili pepper to the pan. Stir and sauté for a moment.
3. Add halved cherry tomatoes to the pan and cook until they soften.
4. Pour in the crushed tomatoes, season with salt and pepper, and let simmer for a while.
5. Add the shrimp to the pan and mix well.
6. Cook the spaghetti according to package instructions, but leave it slightly al dente.
7. Drain the spaghetti and add it to the pan. Toss well to absorb the flavors.
8. Finally, add chopped cilantro and mix.
9. Serve with lime wedges and grated Parmesan cheese on top.
