Ingredients
- 2 dl all-purpose flour - 1 dl potato flour
- 2 tsp baking powder
- 1 dl sugar
- 200 g lemon cream cheese
- 2 eggs
- 2 tbsp lemon curd
- 3/4 dl oil

Topping
- 1 dl sugar - 1 dl heavy cream
- 50 g white chocolate
Instructions
1. In a large bowl, mix the all-purpose flour, potato flour, baking powder, and sugar. 2. In another bowl, combine the softened lemon cream cheese, lemon curd, eggs, and oil.
3. Pour the wet mixture into the dry ingredients and stir until smooth.
4. Spoon half of the batter into muffin cups (12 total). Add a teaspoon of lemon curd to each cup.
5. Top each muffin with the remaining batter and bake at 200°C (392°F) for 17-20 minutes.
6. To prepare the topping, melt the sugar in a pan carefully. Once melted, add the cream and stir until the sugar dissolves.
7. Remove the caramel from heat and let it cool slightly. Stir in the chopped white chocolate until smooth.
8. Frost the cooled muffins with the caramel and decorate as desired.
