Ingredients:
- 100 g butter
- 250 g sugar
- 2 eggs
- Zest of 1 lemon
- 150 ml milk
- 450 g all-purpose flour
- 3 tsp baking powder
- A pinch of salt
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Melt the butter and let it cool slightly.
3. In a bowl, mix the sugar and melted butter. Add the eggs one at a time, mixing well after each addition.
4. Stir in the lemon zest and milk until smooth.
5. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the batter, mixing until just combined.
6. Pour the batter into the prepared cake pan and smooth the top.
7. Bake in the oven for about 40-50 minutes or until the cake is golden brown and a toothpick inserted comes out clean.
8. Allow the cake to cool before serving. Optionally, you can decorate the cake with lemon icing.
